Pumpkin Pie and PB Smoothie
In my efforts to maintain a healthy routine, keeping up with the house chores and a crazy busy family life smoothies have become a vital part of my diet and daily living. With fall already here and with the Holidays inching closer I thought that preparing a Pumpkin pie and PB smoothie was in order.
With 7 grams per serving , peanuts energy gives us more protein than any other nut. Along with more than 30 vitamins and essential nutrients, the peanut is considered a super food. We always have peanuts in our pantry! No matter if I want to drink something refreshing after a hard exercise routine or a fruits and vegetables smoothie (you know me loves some green smoothies!) when I want some protein, peanut butter is my salvation.
I’m not a good at baking only because I just too impatient when it comes to cooking. This smoothie is like drinking a pumpkin pie with a little peanut taste and coconut aroma. In a future post I spill the beans on how to prepare the coconut whipped cream… super simple .
Of course, another reason why I love having peanuts and peanut butter at home is that this source of protein is inexpensive and very convenient. For us, they are a great substitution for when we don’t want to cook meat or seafood but want to feel full. - ½ can pumpkin puree
- 2 tbsp peanut butter
- ½ frozen banana
- 8 oz cold coconut milk
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- 1 tsp ground cinnamon
- 2 tsp honey or agave nectar
- Coconut whipped cream and chopped peanuts for garnish
- Place the pumpkin puree, peanut butter, bananas, coconut milk and spices in the blender.
- Blend until smooth.
- Sweeten the smoothie with honey or agave. For my taste, 2 tsp sweeten the smoothie perfectly but feel free to use more or less accordingly.
- Garnish with coconut whipped cream and chopped peanuts.
