Meal plan for the week of May 18

Weekly meal plan for a family of two.

One of my biggest downfall when it comes to the kitchen and eating right is that I don’t plan our meals with enough time. Well, by making my meal planning a post series on this blog my intention is that public accountability will ignite my new habit of eating clean 90% of the time.

This experiment will also allow to bring you more recipes. The plan for this week is to prepare enough during the dinners so I can have the leftovers for lunch the next day See, it’s a win-win.

Here we go, our dinners will be:

Sunday: Skirt or Flank steak with chimichurri butter baked potato

Monday: Greek Chicken kabobs

Tuesday: Burrito bowl (inspired by Chipotle’s)

Wednesday: Cauliflower pizza

Thursday: arroz con gandules and boneless pork ribs

Friday:  store bought bacon wrapped scallops*

Now, I feel like I need to explain Friday dinner. We usually buy our meat from BJs and those scallops are at a price point that make sense to our budget. It would be more expensive for us to make them from scratch than buying them.
