For my family grilling season is year long. Rain has been our only deterrent and that’s if we don’t have a covered area in the backyard. The one thing we had never “perfected” was cooking diced potatoes. Since we are on a healthy kick that I’m hoping will be the start of a healthier lifestyle, the husband requested some veggies as a side dish for the boneless chicken thighs that we were going to grill later that day.
That’s how this grilled squash and potatoes foil packs came to be. We have tried before after looking a various recipes that mentioned that it only took 20 minutes… maybe if you grilled them with a gas grill, but that have never work for us and our beloved charcoal grill. With stopwatch in hand and aluminum foil on the other we were set. The recipe didn’t disappoint!
The potatoes were soft. The squash was moist and had absorbed some of the garlic flavor. Really, there was no need for the meat. If I could add something, would have been a little parmesan cheese right after opening the foil packs.
