Dipping my toes in Paleo

We are back home from our weekend trip to Orlando. As usual, we ate too much good food. No doubt in my mind that I gained at least 2 pounds.

Earlier today, I went for a run where I was looking to do at least 2.5 miles. I’m not sure if it was that I skipped dinner as I was stuffed from lunch.

Maybe, it was that breakfast consisted of airplane peanuts and chocolate chop cookie or the fact that I was still tired from the weekend. Or, or, that we waked up at 4:00am to catch our flight back home.

#runfail The run ended short at 1.5 miles as my legs felt like tree trunks. ¡No bueno! All I could think was that my diet needs a change because, obviously, what I’ve been doing is not working out.

As I say goodbye As we say goodbye to pasta, rice, beans and corn (staples in our kitchen) the plan is to start giving a try to vegetables that for one reason or the other I haven’t try yet. With that, we welcome the paleo diet.

Since this is going to be an adjustment week and I believe once I get a handle on my eating, everything in moderation is OK… the family will enjoy one reasonable cheat day on the weekends.

For breakfast, I see eggs, bacon and fruit in the future.

As for lunches and dinners, here are a few recipes I want to try:

Lettuce wraps

Salmon patties

Steak and cauliflower puree

    I do Weight Watchers, but am interested to follow along and see how your Paleo journey goes.

      Abby, I did WW many moons ago and didn’t use it like I should had. Maybe I should give it another try.

    I like some paleo recipes, but it’s not the right “fit” of a diet for me. I know some people have had amazing results with it!

      So far I’m eating 80% paleo and so far it’s working. Not as easy as I thought but we’ll see how it goes.
