This question used to haunt me. For most of last year, the answer was usually, “Just coffee, babe, just good ol’ coffee.”
That all changed recently when we promised each other that we would put effort into healthy breakfasts as part of a new morning routine.
Our morning routine now consists of 5 minutes of meditation, review of the big 3 (3 things that we definitely want to accomplish today), 10 minutes of yoga for me and 10 minutes of reading the newspaper for him and eating breakfast before really starting the work day.

You’ll need the following ingredients:
- 1 package Cacique Queso Quesadilla, shredded
- 4 eggs
- ¼ cup cilantro, chopped
- ¼ cup tomato, chopped
- 1 tsp. onion, chopped
- 8 flour tortillas
- Salt and pepper to taste
As you can see, most of this ingredients most likely are already in your pantry or fridge. I know I had most of them! Also, if you want, you can add more veggies to this and make it your own or for when you just have time for brunch… or to entertain friends at your big game viewing party. I know that’s my plan!
